        <![CDATA[ Our local M.U. are celebrating our 25th anniversary, we are planning a finger buffet, sandwiches, sausage rolls, quiche etc.  We would like to unclude some
gluten free bits and pieces, but none of us have any ideas.

Can we simply substitute flour with gluten free, or not. Recipies I have googled seem to add some sort of gum, is this essential?

Looking foreward to your suggestions.

Just seen your query, so hope it&#39;s not too late. My husband suffers from the Coeliac Condition, so I cook and bake gluten-free food for the family all the
time.  You can substitute GF flour for most recipes, though sometime you need to add a wee bit extra liquid - milk or egg because it can be a bit dryer and
alot crumblier.  For home-made bread you can add Xanthan Gum which is entirely optional for any recipe - it just holds your bread  together a wee bit better... ]]></description>

I do not have a gluten problem but have a little knowledge. Gluten is found in the flour, it&#39;s what give the dough elasticity. You can but gluten free
bread ( can be fragile for what you want), baps, cakes, biscuits &amp; crackers in Tesco, their &quot;free from&quot; range are all gluten free. Be careful
with sandwich fillings though. Sausages contain rusk/breadcrumbs so they are out. If you read ingredients anything with starch or flour in them is out. I hope
