Hi Pam here is my well used recipe for scones
RICH FRUIT SCONES 8 OZ S.R.FLOUR PINCH SALT 2 OZS MARGARINE 1 OZ CASTOR SUGAR 2 OZ CURRANTS OR SULTANAS 1 EGG BEATEN THEN ADD ENOUGH MILK TO MAKE TO 1/4PT RUB FAT INTO FLOUR AND SALT THEN STIR IN SUGAR,FRUIT ADD EGG MIXTURE, RESERVE LITTLE FOR GLAZING SCONES IF LIKED ( I DONT ) KNEAD LIGHTLY ON FLOURED BOARD/SURFACE............. THEN ROLL OUT BUT MAKE SURE YOU DONT ROLL BELOW 1/2 INCH IN THICKNESS.......... THEN CUT INTO 2 and half inch rounds bake in hot oven for i0 mins 220 degrees or gas mark 7 FOR PLAIN SCONES 8 OZS S.R FLOUR PINCH SALT 2 OZS MARG ENOUGH MILK TO MAKE SOFT DOUGH ( SORRY NEVER MEASURED IT) I ALWAYS DOUBLE UP INGREDIANTS AND FREEZE SOME ( If they get that far ) |

the best and easiest scones ever,
3 cups self raising flour 1 cup cream 1cup of lemonade 1 teaspoon baking powder add fruit or cheese or leave plain, makes 12 and they are beautiful, let me know how you go, i could never make a scone untill i tried this, you just cannot fail pauline |

I use this one,
8ozs SR Flour 1 1/2 ozs Marg 1 tablsp Sugar Milk to mix Fruit if wanted. Rub marg into flour, add sugar and fruit (if you are using). Add enough milk to make a softish dough, mix gently and handle as little as possible. Put onto floured board and gently press out until about 3/4 inch thick. Cut out and bake in hot oven (gas7). I sometimes just make dough into a round and make lines across to divide into 8 triangle and bake as whole piece, break off slices when you need them. |

hi Jacky,
Just use good old whipping cream (but do not whip) we call it pouring cream here in Oz or single cream, make sure the lemonade is fizzy not flat, let me know how u go, hope u are having better weather than here, it is torrential rain and has been for 3 days so we are cut off from the outside world in Cooran, all exits flooded by rivers, ah well good job the freezer is full, take care pauline |

WEll, I,ve just made my first batch of Paulines Lemonade Scones and they are wonderful. I can see me making these very often, as they are so quick and easy to
