I would have plumped for a foreign celebration day like the Polish "Fat Thursday" or "Doughnut Day" which is the day after Lent starts
(which is always on a Wednesday). This is on the Thursday immediately before.
According to their religion and Polish traditions, they shouldn't overeat during Lent for the respect of Jesus Christ dying for human sins. That's why that one day, called by Poles a "Fat Thursday" they eat plenty of doughnuts, "faworki" (French dough fingers cover with a lot of sugar) and other baked goodies . The more you eat the more happy you should be for the following months of the year
The tradition of "Fat Thursday" or "Doughnut Day" is not only about eating. In the late 90's it was all about the family time. Many women would bake their doughnuts during the day. People who couldn't spend much time home during the day would get their baked sweets from the best bakery in town, even if they had to wait for an hour in line to get what they wanted. In the evening friends, families or neighbors would gather in one's house for coffee and sweets and just have a good time.
Given that we have such a large influx of foreign nationals, I think something along those lines would have gone down well.
