I used to make a Delia Smith recipe for mayo ... a garlic one ... and it was delicious. Haven't made it in years, but it's well worth it if you can be
bothered. I can't remember the quantities now as the recipe was from a friend's book. I do remember the result being very more-ish.

I saw it made when I was at catering college. I decided then and there, that although it tasted wonderful it took too long to make and it can easily go very
wrong. If you use a blender of some sort it takes the arm ache out of it, but don't be tempted to rush it - adding the oil too fast is the main reason it
fails to work.

I make it often katrina - my tip would be to make it by hand you have to be stupid or a cookery student as I was the few times I did it that way - flippin
difficult - but if you have a food processor then it's a breeze .... would you like a recipe? But it will shock you rigid the oil that goes in and of
course it doesnt last as long in the fridge etc
