Pumpkin Soup Recipe Please |

Now don't laugh, but I'm growing pumpkins in my very small garden and it looks like I might have a few coming on. I've never even eaten a pumpkin
but someone told me pumpkin soup is delicious. Any one got a recipe for this? The easier the better

I have a couple.....
Another butternut squash soup or pumpkin! More calories than the one posted earlier, but a doddle to make and really yummy.
The other recipe is... Roasted Pumpkin Soup Cut the pumpkin into 4 pieces (8 if it's very large) and scoop out the seeds. Put into a roasting tin, drizzle with olive oil, season with pepper and nutmeg. Bake at gas 1 for an hour or 2 until soft. Meanwhile soften a chopped onion and some chopped garlic in olive oil. Once the pumpkin is cooked, the skin will be easy to remove and discard. Chop the pumpkin into small pieces and add to the onion with some light stock. Cover and cook on a low heat for 30 mins. Blitz in blender, and sieve if necessary. Add some milk, return to simmer, and serve with dollop of creme fraiche. Happy cooking!

Here in OZ the pumpkin is a must have and available all year round, i nearly cried when i visited my sister in Cornwall only to be told it was out of season !!!!!! here we make pumpkin soup, roast it around your meat, use half pumpkin and half potato for a different kind of mash, stuffed pumpkin just to name a few ideas and of course the famous pumpkin scone, so u see it is a very used vegetable here, have fun with them Pauline |
