Like one or two others, I grate half and slice half and store it in the freezer -no time at all to do grated or sliced cheese on toast, or in a sauce or on top of a dish! I have saved so much cheese since I started doing that -I'm not a big cheese eater and so much went mouldy, however I stored it in the fridge (the most successful was in an airtight box with a slice of bread).
