I have a very simple approach to soup and it works!

I did mushroom soup for my friend and she couldn't believe how it was made it was so tasty.

I chop the mushrooms and fry in a little bit butter or oil for about twenty minutes, then I add a made up knorr stock cube. Blend and voila!

I do broccoli and cauliflower the same way. One bag of frozen mixed cauliflower and broccoli from Tesco boiled in stock cube and blended. if I have any, I cut a chunk of stilton and add it when I am serving the soup. It melts and gives lots of flavour with not too many calories. Cheddar is nice as well.

I don't always blend soup as I like chunky vegetables. A nice spicy tomato can be made by frying some carrots, onions and peppers in a little oil then adding a stock cube and a jar of salsa.

This week I am having the soup I was brought up on - carrots with half grated to colour the broth, turnip and leeks all boiled with a bit beef (or you can use chicken). My mum would add barley and peas btu I don't bother. Lovely.
