That is a "BIG" question....
I have about 15 kinds of different inkpads in my stash, and at the moment, the "dye" inkpads are the ones I use the most. But I began with pigment inks, and have loads that I have not used for ages....
I will give you my toplist of inkpads, being a stampaddict. I am sure there are as many "uses" as there are stampers out there....lol, sorry, won´t make it easier though.....

Adirondack dye inkpads
- Excellent for brayering, if you have seen Barbara Grey, you will know what I mean.
*
Big n´juicy
- dye inkpads with 5 colours - good for brayering+ watercolouring.(i.e press the whole pad on a large acrylic block, spray with water and pick up paint with paintbrush or waterbrush)
*
Staz-On
- Permanent inkpads. Good with watercolour techniques since they are waterproof(permanent) They are excellent when you want to stamp on "Shrink Plastic" and "Acetate". They are also transparent which make them good to colour on top of stamped images on glossy card
*
Pigment inks
- Like "Versacolour" and "Encore". Good for embossing powders and "Kiss stamping". Many, many colours in the range. Though, am afraid I have forgotten many techniques that you can do with them....sorry

Blending Blox
" inkpads - They are multicoloured dye inkpads, but in the same colour range, like browns, greens, yellows etc..

Kaleidacolor
- raised rainbow dye inkpads - very similar to Big n´Juicy´s but with narrower strips of colours - good to brayer with and watercolouring.....

Chalk inkpads
- as you said, good for basic stamping, especially for backgrounds, they blend very well though and you can get very nice kind of "impressionist" backgrounds if you like.
I am sorry, there are more but have forgotten. But dye inks and Staz-on pads works very well with glossy card, they blend beautifully
I am actually glad that you asked the question, it made me look in my drawers and think of things I have forgotten how to do, and especially good, since I truly am on a "Stash Diet"
