Anyone got any recipes that are suitable for diabetics??? Preferably easy ones, as I am definitely challenged in the kitchen area!

Got a lovely one for coffee mousse.
One sachet of gelatine 3 tsp coffee granules 250grm quark 250grms fat free fromage frais 2 eggs separated. sweetener method: disolve the gelatine in a little water. Add coffee when disolved stir in the quark and fromage frais add the egg yokes Whisk the whites until stiff and gently fold into the mixture. Add sweetener to taste (A couple of tablespoons?) leave to set. This also works well using cocoa powder for a chocolate mousse. |

Have just posted dessert mousse recipe which my brother in law loved who was severely diabetic, but please check you diet first.

I dont know if I can say this so I will do it fast then someone can take it off hopefully you will see it first.
go onto sainsburys website & then receipies & you can put in for diabetics & it will give you everything you need & a shopping list to go with it. Hope this helps Ness x |
