Ingredients:
Butter, 1 chopped onion, teaspoon chilli powder (if liked), teaspoon ground coriander, 2 crushed garlic cloves, 750g sweet potatoes, peeled and cut into chunks,
500mil veg stock.
Melt knob of butter in large pan, add onion, chilli, coriander and garlic and cook for about 8 mins till soft. Add sweet potato, cook for a few more minutes then add stock, bring to the boil and simmer for 15 minutes. Blend and season, serve with a sprinkling of cheese.
This makes quite a thick soup, you could add more stock if you wanted it thinner.
