2lb bread flour
2 sachet dried yeast
4 oz sugar
2 tsp mixed spice
1 tsp cinnamon
1 tsp nutmeg
8 oz mixed fruit.
16oz milk
4 oz fat
2 eggs
warm dry ingredients in microwave for 2 mins
warm liquid ingredient (not eggs) for 2 mins
add liquid to warm dry ingredients
add eggs
mix well and knead for 10 mins leave to rise1 hour
knock back and shape into 24 buns marking crosses with a knife
brush with milk (not really necessary if you are using a sugar glaze)
leave to rise again for half an hour or so then bake for 25 mins
half way through cooking brush liberally with a glaze of 4ozs sugar 6tablespoons water
I usually make the dough in a bread maker on a dough setting leaving out the fruit then after it has risen knead in the fruit and shape into buns I also do the rising in a barely warm oven.
This mixture will make 24 good sized buns 283 cals each bun. They are delicous!
